Thumbs up Whole baked Salmon. Favourite fish dish!

This is one of my favourite fish dishes. Whats yours?


Whole baked salmon!
Whole salmon (2 kg) gutted, scaled, washed
Small lemons (3) thickly sliced
Olive oil (100 ml)
Mixed herbs [optional]
Garlic head (1) [optional] halved horizontally
Salt and pepper {to season}
Serves 8 Preparation time: 25 mins Cook time: 35 min




Set oven to 190°C (374°F), fan oven 170°C (338°F), gas mark 5.
  1. Trim fins. Score skin on both sides 2 - 3 cm apart. Brush with oil. Sprinkle some salt and pepper over. Put 3 layers of foil on a baking tray, over lapping the long edges.
  2. Heat some oil in a frying pan and fry lemons for, 2-3 mins, until golden. Season and allow to cool. Sprinkle some of the herbs on the foil, lay salmon on top. Arrange lemons and garlic around and inside salmon. Sprinkle herbs on top. Splash on some oil and season.
  3. Wrap the foil around the salmon to make a tent. Place in the centre of the oven for 30 - 35 mins, depending how thick the salmon is. Once cooked, remove from oven and stand, still in the foil for 10 mins.
  4. Unwrap foil and carefully peel away skin with a cutlery knife, this may be discarded. Scrape off any brown flesh to leave only pink flesh.
  5. To serve gently push a spoon down the length of the fish, parting it into two long strips. Push the spoon into the flesh where it joins the backbone, easing the flesh off. Break the first half into 4 portions. Pull off back bone and head serve second half.
  6. Drain juices into a jug serve with a drizzle of juices and the caramalised lemons.
  7. ENJOY!

Nice work! My favorite dish just has to be sea bass fried in batter with a few herbs. LOVELAY!

Add some Fennel too gives it a mildly different taste that is very nice

If you are asking it can be to any of those BUT as Perch is a course fish you'd better check you local bylaws about the taking of Course fish

In most places it is banned and can result in the EA coming for your tackle
