hello chris. im Rob the hunter. i have been fishing since i was 10 im now 27. i can help you catch pike and perch.
for perch fishing i would use a simple waggler setup on 4-6lb line with bulk shot at the bottom about 3-4 inches from your hook. this will help get your hookbait down to the perch before the tiddlers get a chance to gorge on it. which can be a pain in the #%*#. hook size 12. if bites are not forthcoming then change to a smaller hook 14, 16 or 18.
baits to use would be classic double red maggot or single red (doesn't have to be red i just find red more productive). Worms chopped, or whole, i know this sounds mad but really thin strip of raw bacon rind about 1 inch long have caught me some goodens.
Or you could use 12lb line with a wire trace possibly 20lb break with a small thin 1 inch spinner which resembles a small minnow. which you jig across the bottom and you never know a pike could turn up at any moment.
