The technique is the same regardless of size, unless its a 20lb monster you need to straddle over, to pin it down. I find you have a bit more room to manoeuvre on the larger fish, if anything. If a fish is hooked fairly deeply you may need to access the hooks from under the Gill cover between the rakers, delicately, rather than from the mouth. If you use good detection & set the hooks promptly, deep hooking is unlikely to happen. The PAC website has a good unhooking guide, or a DVD or experienced Piker with you.
