first lay the fish on a chopping board then gut it after cut off its head and tail off, now lay it with the back facing up and slide your thum while pushing hard up and down its spine do this 4-5 times them turn it over and pull the spine up with all the bones attached to it now make a clean cut long-ways between to two fillets then place on a tray with cooking oil (skin down) place under the grill to cook then enjoy
