Most sweet baits can work but Tench seem to love Sweetcorn and worm
they also seem to like carp or Halibut micro pellets as ground feed around here

As for tactics
The older way is a simple running ledger
or light weight float (even older is the lift float method pic here )

A Margin pole can be deadly when they really have their heads down - my son took 60lb in 3 hours at a local lake to us

the mani nthing is that you have to have your hook on the bottom layed on maybe an inch then as long as they find your feed they'll hover up the rest too -- the only real problem may be the Carp love the same baits so you'll liable to get one or two of those too
